The Yummmmmmmmmmm Banana Bread

It was a friday evening and i was clearing up the kitchen when i came across two "over ripe" bananas, hidden beneath a bunch of shopping bags and polythene covers. I remember the day hubby dear went on a fruit shopping spree after reading about the benefits of fruit in daily diet. I was awestruck at the quantity and variety that came home.

I did not know where to place them or how to use them, there was bananas (poovan) huge yellow ones, guavas, mangoes and grapes.

The mangoes and the grapes were the first to get washed off, guavas and bananas remained. Bananas vanished out of sight and got forgotten about......... and here they were giving me evil looks. I took one look at them and was almost throwing them into the wastebin when I was stuck by this sudden brainwave; why not banana bread and i had water in my mouth already

I put them away in the refrigerator and decided that it would be banana bread tommorrow

For those who havent tried the bread yet; it is a treat to the senses and very easy to bake as well. It never goes wrong

All you need to have handy is some flour ( maida), eggs, milk, sugar, (cardamom, cinnamon and cloves) if you dont have vanilla essence handy
the measurements to bake one banana bread in a 1 kg bread tray is

3 full cups of maida
3 eggs
100 gms butter
2 tsp of baking powder
.5 tsp of baking soda
Two large bananas mashed
2.5 cups of sugar
1 tsp of vanilla essence /a mix of 2 cardamoms, 3 cloves , 1 stick of cinnamon

If you are using the spice mix instead of vanilla essence, put them along with the sugar into the mixie cup when you powder the sugar.

In a mixing bowl, mix together, the powdered sugar, eggs, butter and mashed bananas. this is easy if you have a hand mixer at home or else use an egg beater and beat it to creamy consistency, add the measured out quantity of maida (you need to add the baking powder and soda into the flour and mix well with a spoon) and blend well till the batter is slighlty thick and is of flowing consistency ( dosa flour consistency). If the batter is too thick, you need to add milk to loosen the consistency.

Now, grease the bread tray and warm it in the oven; pour the batter into the baking tray. the batter should not occupy more than half of the baking tray.

Place the tray in the oven and bake at 160 centigrade for about 60 minutes ( however you need to check with a tooth pick to see if it is done before taking it out of the oven)

Cool the bread, turn the bread over and cut into desired sizes.

Once you taste this bread you will become life time fans of the Banana Bread
